Zucchini Roll-Ups with Millie’s Vegan Cheese


Looking for a delicious way to make vegetables the star of your meal? These Zucchini Roll-Ups are packed with colourful vegetables, herby flavours and creamy Millie’s Burnt Red Chilli & Garlic Cheese.

Rolled, baked and finished with a flavourful homemade marinara, they make an easy, wholesome meal that feels a little special.


Ingredients

For the Roll-Ups

  • 3 large zucchini (yellow and green), sliced lengthwise into thin strips

  • 1 carrot, diced

  • ½ cup French beans, diced

  • 1 cup spinach, diced

  • ½ cup Millie’s Vegan Cheese – Burnt Red Chilli & Garlic

  • ¼ cup fresh basil, chopped

  • 1 tbsp chilli flakes

  • 1 tsp Italian seasoning

  • 1 tbsp minced garlic

  • 1½ cups marinara sauce

  • Salt, to taste


For the Marinara Sauce

  • 5 tomatoes, boiled and roughly chopped

  • 1 onion, diced

  • 6 cloves garlic, diced

  • 2 green chillies, diced

  • 1 cup fresh basil, sliced

  • 1 tsp chilli flakes

  • 1 tsp dried oregano

  • 1 tsp olive oil

  • Salt, to taste


Method


Make the Marinara

Heat olive oil in a pan. Add onion, garlic, tomatoes, green chillies, chilli flakes and oregano. Simmer for about 20 minutes until the tomatoes break down.

Let it cool slightly, blend roughly, then return to the pan. Add fresh basil and adjust the seasoning.


Make the Roll-Ups

  1. Lay the zucchini slices on a kitchen towel, sprinkle lightly with salt and let them sit for 15 minutes.

  2. Steam the carrot, French beans and spinach together.

  3. In a bowl, combine the vegetables with Millie’s Vegan Cheese, garlic, basil, chilli flakes, Italian seasoning and salt.

  4. Preheat the oven to 220°C.

  5. Spread the marinara sauce across a baking dish.

  6. Place about 1 tbsp of the filling on each zucchini slice, then roll it up.

  7. Arrange the rolls snugly in the baking dish. Top with the remaining marinara sauce.

  8. Bake for 25–30 minutes, or until the roll-ups are heated through.

Serve & Enjoy
