Sweet potatoes are delicious on their own, but when they’re roasted until caramelised and filled with a creamy herb cheese mixture, they become something truly special.
This recipe pairs the natural sweetness of baked sweet potatoes with the savoury flavours of Millie’s Rosemary, Thyme & Oregano Cheese Spread, crisp peppers, olives, jalapeños, and spring onions. Ingredients
* 2 medium orange-fleshed potatoes
* 1 tbsp olive oil
* ¼ cup yellow bell pepper, finely chopped
* ¼ cup red bell pepper, finely chopped
* 2 spring onions, finely sliced
* 1–2 jalapeños, finely chopped (adjust to taste)
* 2 tbsp olives, chopped
* 3–4 tbsp Millie’s Rosemary, Thyme & Oregano Cheese Spread
* Pink salt, to taste
* Fresh parsley, for garnish
Method
Step 1: Roast the Sweet Potatoes
Preheat the oven to 200°C.
Wash the sweet potatoes and slice them in half lengthwise. Brush the cut side lightly with olive oil and place them cut-side up on a baking tray.
Bake for 40–45 minutes, or until the flesh is soft and easily pierced with a fork.
Step 2: Make the Filling
Allow the sweet potatoes to cool for a few minutes. Carefully scoop out most of the flesh, leaving a thin border around the skin so it holds its shape.
Transfer the scooped sweet potato to a bowl and gently mash it.
Add the chopped yellow and red peppers, spring onions, jalapeños, olives, pink salt, and Millie’s Rosemary, Thyme & Oregano Cheese Spread. Mix until everything is evenly combined and creamy.
Step 3: Stuff & Bake Again
Spoon the filling back into the sweet potato skins, mounding it slightly on top.
Bake for another 15 minutes, until the filling is hot and lightly golden around the edges.
Step 4: Garnish & Serve
Garnish with fresh parsley and serve warm.
